In Baldur’s Gate 3 (BG3), Permadeath only applies to characters who are not recruited as a party members. Apart from that, all the companions who are a part of your party can be revived by using some features. The first one is to use the Scroll of Revivty which can be bought or obtained by doing some quests. If you don’t have it yet, then you can always take help from a Skeleton known as Withers located in Dank Crypt. This NPC can be recruited to your camp as soon as you reach level 3. He not only helps you revive your allies but also recruits some Hirelings as your companion. That is a good option to go with when you want some character to face Permadeath in BG3 technically and need some new allies.

If you as a main character get in a deadly situation, then you can also avoid the face of death with the help of Death Saving Throws. This is a mechanic where the game automatically rolls a 20-sided die when your character’s HP comes to zero. If you successfully win the roll, then you’ll get stabilized. But if you run short and fail, then your character will die and will have to reload the save. During the Death Saving throw, you also get a Help option on the ally’s body to resurrect & stabilize them quickly. So it seems there are plenty of options to avoid the permanent death scenario in the game.
