Irrespective of whether you are carrying a gun or a melee weapon, you will have to use the same command to holster your weapon in Watch Dogs Legion. Notably, the same command will not be used to unholster your weapon in the game.
In order to quickly unholster your weapon, you need to hit (X or Square on controller and F on mouse and keyboard) for a melee weapon or the aim button for a firearm. By doing this your character will have their weapon back in their hands.
