Finding blue items in Genshin Impact is way easier than other colours. Yes, you read that right! Every common item scattered throughout the map count as a Blue item. The most common blue item that you will come across the map is the humble mint flower.
There are plenty of Mint and Glazy Lily that count as a blue item in Genshin Impact can be photographed in Qingce Village. If you have already explored these areas then the next location you should go to is Liyue Harbor. When you get there, you will find enough Mint and Glazy Lily in the gardens located near the Palace.

If you have not collected enough photos of the colours that you actually needed to give to Ji Tong, you can use the ‘Photo Swap‘ option in the event to get the required photos. Notably, you will have to obtain at least one photo of all colours to receive rewards from Ji Tong. There are five colours that available on the event page Red, Blue, Gold, Ochre, and Purple. Make sure to keep taking photos of all objects until you have used your daily limit.
