Unlike previous Dead Space games, there is no requirement for unlocking the Impossible Mode in Dead Space Remake. The Impossible Difficulty level is available to opt from the moment you begin the game. Although, in previous installments, you were required to play the entire game at least once on any difficulty level to unlock the Impossible Mode.
