In order to change the difficulty in Dirt 5, you need to locate ourselves on the menu screen or any screen during a race. What all you need to do is to simply press Options if you are playing Dirt 5 on PS or Menu on Xbox to open up the Profile menu or pause the race you are participating.
After doing this, now go to Settings and then select Driving Aids and you will then see the Career difficulty option at the top of the page. It is totally up to you select the desired option for Traction Control and your Anti-Lock Brakes, making your gameplay entirely different.
