While there’s no exact answer available yet, it appears that the in-game seasons change after every 12 hours (roughly). This means you have to wait it out until it’s the season you’re looking for to catch a specific fish.
Is there a Totem to Change the Season?
Unfortunately, there’s no totem that can change the season so waiting is the only solution. Switching servers doesn’t work in this case.
Weather, however, can be changed with Totems which are consumables. The Windset totem changes the weather to windy across the server, the Smokescreen totem changes it to foggy, and the Tempest totem changes the weather to rainy. There’s also a Sundial totem that can change the server from day to night or vice versa.
