Java Edition
The Java Edition of Minecraft was the first Edition that Mojang had created. This is where the game we know and love started from. As such, Java Edition has millions of players with a slew of amazing things. Also, Java Edition Minecraft is open-source which makes it accessible to the Modding Community. This Edition can be easily Modded with full support & has a wide variety of Mods & Modded Servers on it like Hypixel, Pixelmon, Skyblock, etc. Networking & Server hosting is very simple & easy to perform as well. Newer updates to Minecraft first comes in Java Edition in newer Versions & Snapshots. On top of that, this Edition has third-party app support which makes it easier to connect with other people. So if want to be up-to-date, then Minecraft Java Edition is your choice.
Although Java Edition seems amazing, it is not without flaws. To run the game in Quality, you will need to have a decent or better spec’d PC. Speaking of which, Minecraft Java Edition is only available on PC. It is not cross-platform nor you can get the Java Edition on other platforms. So if you have a low-end device, you may be able to run the game but it will have its own set of issues. Saying that it is perfect for Modding. So if that is why you want to get Minecraft then pick up Java Edition.
Bedrock Edition
Minecraft Bedrock Edition was first created as Minecraft Pocket Edition and was a Mobile version of the main-game Minecraft. It was created after the traction Java Edition was getting. Later on, it was bought by Microsoft and has accelerated to the point where it is on power with Java Edition. Bedrock Edition of Minecraft is the best Edition if you want to get more Social experience as it is available on all platforms. If you have Minecraft that is not Java Edition or on PC, then it is the Bedrock Edition or a variant of it. Although it seems identical to Java Edition, there are many keen differences in gameplay and support since Microsoft owns it. This is very easy to pick it up & play with friends & family. You can also play with people from different platforms as it has crossplay & cross-platform support.
But unlike Java Edition, it is very hard to Mod. Modding on Bedrock Edition is tough to nearly impossible. Many Top Minecraft Servers like Hypixel & Skyblock do not support Bedrock Edition. So players from this Edition cannot join them. Networking & Server hosting is also very tough and involves a lot of complex steps. Although the Marketplace has helped Bedrock gain some customizability, it is nowhere close to what Java Edition has. It is very easy to set up a private Server with friends & family but not with people outside of that. There is also no third-party software support so having a huge Multiplayer Server with thousands of players is not possible.

Objectively speaking, Minecraft Java Edition is better but has newer updates trickle in, the line of Difference blurs out. Ultimately, what Edition you choose depends on what you want from the Edition & what you want to do in the game.
