In Zelda Tears of the Kingdom (TotK), you can have six horses tamed at once. However, this does not mean you cannot get more horses if you already have six. You can still tame more horses, and when you return to the stables, there will be a new interaction.
The stable owner will tell you that to add this new horse to your collection; you must let go of an old one. So, you must replace the new horse with an old one. This works great, as sometimes you will spot a horse you need to tame, and you won’t have to go back to the stables first. You can tame it first, then bring it to the stables to replace it.
