You can easily find Mighty Thistle and Armoranth during your first mission, the Battle of Hyrule field. The field is all grassy and you will have to cut these grasses to get the plants you are looking for. Hence, you will need a character like Link that can use his metal sword to cut the grasses and get you both Mighty Thistle and Armoranth. This process might take some time, but eventually, you will get the plants.

If you go north from the place where you drop in the mission, especially the northwest corner of the map, you will more likely find Mighty Thistle drops. On the other hand, if you move to the south, there are more chances of getting the Armoranth plant.

To the southwest position from where you drop, you will find a skull chest. You can get Mighty Thistle and Armoranth, along with other items, from this chest as well. However, the reward that you get from the skull chest is random. Hence, you might or might not get the plants. But you can keep dying and respawning in the location until you get the rewards you are looking for.
